A Global Culinary Celebration at the International Young Chef Olympiad 2026, where nations came together to showcase talent, heritage and innovation through food

The 12th edition of the IIHM International Young Chef Olympiad (YCO) 2026, hosted by the International Institute of Hotel Management (IIHM), once again transformed India into the global capital of culinary excellence. Held from February 1 to 6, this international culinary Olympiad brought together student chefs from 40 countries, reaffirming YCO’s status as the world’s largest gathering of young culinary professionals.

For the first time in its 12 years history, the grand journey began in Bengaluru, where the Opening Ceremony marked the official commencement of YCO 2026. The Garden City became the gateway to a week of culinary diplomacy, welcoming international participants, esteemed mentors, and globally respected judges for the celebration and exchange. Delegates from forty nations as well as internationally acclaimed celebrated chefs being the judges of the competition experienced Indian culture, cuisine and traditions firsthand—setting the tone for a competition that goes far beyond the kitchen.

This year’s theme, “Preserving the World’s Global Culinary Heritage through AI,” defined a bold new chapter for the Olympiad. As announced by Dr Suborno Bose, Chairman & Chief Mentor of IIHM and Indismart Group Worldwide, YCO 2026 placed technology, leadership and global unity at its core. He emphasised that YCO is not merely a competition, but “a global stage for talent, diplomacy and learning,” where young chefs begin their journey as ambassadors of cuisine, culture and collaboration.

Following the opening celebrations in Bengaluru, participants, judges and the mentors travelled across five Indian cities for the preliminary rounds. IIHM campuses in Delhi, Pune, Hyderabad, Goa and Bengaluru hosted competitive and cultural events, welcoming international guests with warmth and hospitality. One of the most celebrated highlights was the United World of Young Chefs (UWYC)—a spectacular non-competitive evening where chefs and mentors from the participating nations prepared and presented their national dishes together. Often described as a culinary United Nations, UWYC embodied YCO’s enduring philosophy: Uniting the World Through Food.

Beyond competition, YCO 2026 positioned India at the centre of a global culinary exchange. Participants explored regional Indian cuisines, local ingredients and cultural practices, gaining a deeper understanding of the country’s rich gastronomic heritage. For many contestants, it was their first immersive encounter with India—an experience that shaped lasting perceptions of its diversity and hospitality ethos.

A defining pillar of this edition was IIHM’s pioneering integration of Artificial Intelligence into hospitality education. Through NamAIste Hospitality GPT—IIHM’s proprietary hospitality-focused Large Language Model—contestants received access to AI-enabled culinary dossiers tailored to each participating country. Separate Culinary Heritage GPTs were created as permanent knowledge resources, while sustainability-driven AI tools encouraged zero-waste menus and carbon-conscious culinary practices.

As Dr. David Foskett OBE, Chairman of the International Hospitality Council, observed, YCO represents culinary diplomacy in action—where ancient food wisdom is preserved and passed to a new generation using the most advanced AI tools.

After thrilling rounds in various cities, the last leg of the competition was held in Kolkata for the Grand Finale — a dazzling showcase of skill, innovation and global gastronomy. Around 40 countries participated, sending their best young chef ambassadors to compete for culinary glory on an international stage.

The final days in Kolkata were nothing short of electric. High-stakes cook-offs, creative plating challenges, and cross-cultural collaborations culminated in a spectacular awards night under the city’s glittering lights. In the grand celebration, Enri Cuedari of Albania was crowned World Champion of YCO 2026, lifting the coveted golden toque — while teams from England and Sri Lanka claimed silver and bronze honours respectively.

But more than trophies and titles, YCO 2026 was a testament to unity, diversity and the future of hospitality — where young chefs became ambassadors of culture, friendship and shared dreams. The Olympiad has transformed into a global knowledge ecosystem, where heritage meets innovation and tradition fuses with technology.

Conceived in India and celebrated worldwide, the Young Chef Olympiad continues to be a benchmark of excellence in global hospitality education. At the heart of this remarkable journey stands IIHM — not just as a host, but as a visionary leader in hospitality education. With its commitment to excellence, global standards, international collaboration and transformative learning experiences, IIHM continues to be India’s best hospitality college, acknowledged and respected around the world.
